Another take on a Chicken Croquette recipe from the fine folks at Food. The base of this recipe can serve a variety of meats and seafood, and veggies, but of course, my favorite is Chicken... which usually is called Chicken but really Turkey.

  • 1 recipe Yellow Chicken Gravy (Have to have yellow chicken gravy for the full Croquette Experience... and Mashed Potatoes!!)

Instructions
  1. Melt butter in saucepan.
  2. Add onion and sauté until tender.
  3. Add flour, salt and pepper.
  4. Add milk slowly and cook, stirring constantly until it thickens.
  5. Remove from heat and mix in the bread and chicken.
  6. Chill 1 hour.
  7. Shape into 4 patties.
  8. Dredge each patty in flour, then dip in egg and then coat with breadcrumbs.
  9. Put enough vegetable oil in a skillet to at least 1/2 inch deep when heated.
  10. Fry croquettes until browned, turning once.
  11. Drain on paper towels.
Recipe Notes

Serve with Yellow Chicken Gravy on a bed of Mashed Potatoes, and then more gravy!!
