General Instructions
  1. Run Chicken under cold water and pat dry with paper towels.
  2. Coat Chicken with Coating Mix.
  3. Melt butter in a double boiler.
  4. Lap melted butter on Chicken.
  5. Add the Coating Mix to a large plastic bag, Zip Bag, etc...
  6. Add the Chicken to the bag and shake, roll and pat.
  7. Arrange pieces on a lightly greased baking sheet. (I would first line the baking sheet with Non-Stick Foil... actually, I line everything with Non-Stick Foil... it's non-stick, and makes cleanup a breeze.)
  8. Bake in a preheated 350 degree F oven for about 1 hour. Drizzle lightly with a little oil and water about every 15 minutes.
  9. Drain on some paper towels and serve with Big Match Secret Sauce.
For Extra Crispy
  1. Drizzle Chicken with a little oil and water, and then add back into the Coating Mix and shake.
  2. Add to sheet pan as described above.
Recipe Notes

My handwriting is like that of a chicken on crack; my Ex writes like a doctor, which is slightly worse, so I interrupted the hand-written recipe to the best of my abilities.

Contained in the original recipe is a nice sauce to accompany the Fried Chicken, and in the lower margin, as an after thought, is an attempt to emulate the famous White Castle Burgers.

I remember when she made this chicken recipe... It's wonderful!!
